Ultimate chilli con carne
This scrumptious chilli con carne contains a little dark chocolate to make it rich and deep and flavour, but don't worry, you won't be able to taste it as such

What you need:
- 500g lean steak mince
- Black pepper
- 100g chorizo, 1 cm cubes
- 2 onions, very finely diced
- 1 green pepper, finely diced
- 3 cloves garlic, crushed
- 1 tsp freshly ground cumin
- 1 stick cinnamon
- 1 bay leaf
- 1 tsp chilli powder (or more to taste)
- 1 tsp dried oregano
- 2 400g tins tomatoes
- 1 tin red kidney beans
- 1 tbs tomato puree
- 200ml beef stock
- 3 tbs Kikkoman Soy Sauce
- 1 tsp sugar
- 20g dark chocolate 70%, grated
What you do:
- Season the mince with a twist of black pepper then brown in batches in a hot pan and set aside. Fry the chorizo then add the onion, garlic and green pepper and cook for a further 3-4 mins. Add the cumin, cinnamon, bay, chilli powder and oregano cook for 1-2 mins, then return the browned mince to the pan along with the tomatoes, beans, puree and stock. Cover with a lid and cook over a low-med heat for at least 1 hour (the longer you can give it the better)
- Towards the end of the cooking time add 3 tbs Kikkoman soy sauce to season then add the sugar and grated chocolate.
- Serve with rice, and garnish with some fresh coriander, soured cream and some grated cheddar cheese.
Cook's tip:
Serve with garlic bread or jacket potatoes instead of rice if preferred
