Lamb with oatmeal & herb crust

Rack of lamb with a delicious herby crust will put a smile on your family's faces when you put this on the table!

Preparation time: 10 minutes
Cooking time: 20-25 minutes
Serves: 4

What you need:

  • 2 racks of British lamb, each cut in half, approx. 1kg
  • 50g medium oatmeal
  • 25g butter, melted
  • ½ x 20g pack parsley, chopped
  • ½ x 15g pack chives, chopped

What you do:

  1. Preheat the oven to 200°C, gas mark 6.
  2. Trim the lamb of excess fat and dust them with 1 tbsp of the oatmeal, place on a baking tray. Mix the remaining oatmeal with the butter, and herbs and, season well. Mix well to combine.
  3. Press onto the fat side of the lamb and roast for 20 minutes for rare and 25 minutes for medium.
  4. Cut the lamb into thin pieces.

Handy hints and tips:

Try replacing the parsley with chopped fresh rosemary for a more traditional flavour.
