Chicken with oatmeal & sage stuffing

Try using this stuffing mix to fill the cavity of whole chickens before roasting - it's perfect for Christmas turkey too

What you need:

  • 1 onion, finely diced
  • 1 tbsp oil
  • 75g medium oatmeal
  • 50g nuts, chopped e.g. cashews and walnuts
  • 25g wholemeal breadcrumbs
  • ½ x 15g pack sage, chopped
  • 4 boneless, skinless chicken breasts (approx. 500g)

What you do:

  1. Preheat the oven to 200°C, gas mark 6.
  2. Fry the onion in oil for 4-5 minutes. Mix together the oatmeal, nuts, breadcrumbs and sage, season well and stir in the onion with 2 tbsp water. Mix well to combine.
  3. Flatten each chicken breast between 2 sheets of cling film with a rolling pin until thin, spread the stuffing mix over the chicken and roll up. Wrap in foil tightly to form a sausage shape. Bake for 25 minutes.
  4. Remove from the foil and fry in a little oil until golden. Serve with vegetables and new potatoes.
