Curried chicken & mango jacket potato

A delicious curry-filled baked potato with a fruity twist

  • Cooking: 6 mins
  • Serves: 2

What you need:

  • 2 McCain Ready Baked Jackets
  • 150g cooked chicken, cut into bite size pieces
  • 3 tbsp light mayonnaise
  • 3 tbsp low fat yogurt
  • 2 tbsp madras curry paste
  • 100g fresh mango, peeled and diced
  • Salt & pepper to season

What you do:

  1. Cook two McCain Ready Baked Jackets in the microwave as per instructions on pack
  2. Mix together the mayonnaise, yogurt and curry paste and season well with salt and pepper
  3. Next add the mango and chicken and mix well
  4. When the potatoes are cooked, open slightly, top with the chicken mix and serve

Cook's tip:

This recipe is great for using up any leftover chicken from your Sunday roast!
