Alan Coxon's mushroom, ham & potato casserole

A warming and filling dish, this casserole was devised by food archeologist Alan Coxon and takes just 10 minutes to prepare

Prep time: 10 mins

Cook time: 40 mins
Serves: 4

What you need:

  • 25g unsalted butter
  • 2 leeks, washed and sliced
  • 100g button mushrooms, halved
  • 300g ham, cut into 1cm pieces
  • 295g tin condensed cream of mushroom soup
  • 100ml semi skimmed milk
  • 500g King Edward potatoes, thinly sliced
  • ½ tsp paprika

What you do:

  1. Preheat the oven to 200°C, gas mark 6.
  2. Melt the butter and fry the leeks and mushrooms for 5 minutes.  
  3. Place in a casserole dish with the ham, soup and milk, stir well.
  4. Top with the potato and sprinkle over the paprika. 
  5. Bake for 40 minutes until tender and golden.
