Peach & cherry ice lollies

Peach & cherry ice lollies

Home made fruity ice lollies made with glace cherries, peaches and cherry juice.

  • Serves: 10

What you need:

  • 250g caster sugar
  • 400ml water
  • 200g ripe peeled peach slices (tinned are very good)
  • 150ml cherry juice
  • 20 French glace cherries, roughly chopped

What you do:

  1. In a small saucepan, bring the water and sugar to a boil. Boil for 2-3 minutes and then remove from heat. Pour into a bowl and leave to chill completely.
  2. In a food processor or blender, add half the sugar syrup with the peaches. Blend until very fine. Pour into 8 ice-lollie molds, add wooden sticks and place in the freezer for approximately 1 hour.
  3. Take the remaining syrup and combine with the cherry juice and chopped cherries.
  4. When the peaches fairly set (after 1 hour), pour into the molds the French glace cherry mixture and let freeze solid, for about 2-3 hours.
  5. Run the outside of the mold under hot water to unmold the lollies.

Cook's tip:

Peach is a match made in heaven for French glace cherries but try other flavours like nectarines or kiwis. If making in the winter, tinned peaches are a good idea as the flavour will be sweeter than off-season produce.
