Soft noodles with crab & sweet chilli sauce

You may have tried sweet chilli sauce with a variety of meats, but have you ever tried it with crab meat? Make sure you're not missing out!

Serves: 4 (main course)

What you need:

  • Olive oil
  • 200g red peppers, finely chopped
  • 2 garlic cloves, crushed
  • 50g onions, finely chopped
  • 150g Tracklements Chilli Jam
  • 100ml fish stock or water
  • 300g chopped tomatoes
  • 350g fresh crab meat
  • 250g soft noodles
  • 1 tsp coriander, chopped
  • Salt and pepper

What you do:

  1. Heat some olive oil in a pan and add the peppers, garlic, onion and a pinch of salt. Cook over a medium heat until soft.
  2. Add the Chilli Jam, fish stock and chopped tomatoes. Cook for 20 mins.
  3. In the meantime, cook the noodles according to the instructions. Add the chopped herbs and crab meat to the sauce and stir in the cooked noodles.
  4. Toss together well and season.
