Pork satay skewers with green chilli jam

Scrummy satay skewers to enjoy in the sun to make your BBQ even more perfect

  • Preparation: 60 mins
  • Cooking: 20 mins
  • Serves: 4

What you need:

  • For the pork skewers:
  • 8 x skewers
  • 4 x 200g pork loin fillets
  • 3 tbsp fresh lime juice
  • 2 tbsp of groundnut oil
  • 3 tbsp Tracklements Green Chilli Jam
  • Salt and pepper

For the satay:

  • 200g smooth peanut butter
  • 3 tbsp Tracklements Green Chilli Jam
  • 2 tbsp of soy sauce
  • 75ml coconut milk
  • Fresh coriander, chopped
  • Lime quarters to serve

What you do:

  1. Cut the pork into chunks. Mix together the lime juice, groundnut oil, Green Chilli Jam, salt and pepper and put the pork into the marinade. Cover and refrigerate for one hour.
  2. Meanwhile, mix together the peanut butter, Green Chilli Jam, soy sauce and coconut milk and store in the fridge.
  3. Thread the pork onto skewers and grill for 5 mins or until cooked.
  4. Squeeze some extra lime juice over the top of the skewers.
  5. Serve with the stay dip, garnished with coriander and a lime wedge.

Cook's tip:

If using wooden skewers, soak them in water for an hour before use
