Classic chicken cacciatore

What you need:
- 1kg boneless, skinless chicken thighs
- 1tbsp vegetable oil
- 1 onion, sliced
- 1 green pepper, cored and sliced
- 2 cloves garlic, crushed
- 2 cans chopped tomatoes
- 250ml Heinz Tomato Ketchup
- 50ml white wine or chicken stock
- 1 1/2tsp each dried thyme and oregano leaves
- Rice, to serve
What you do:
- Preheat the oven to 180°C.
- Trim the chicken of excess fat or gristle.
- Heat oil in a large pan set over medium heat.
- Brown the chicken in batches and transfer to a casserole dish.
- Sprinkle onion and peppers evenly over the chicken.
- Stir together the chopped tomatoes with the Heinz Tomato Ketchup, wine (or chicken stock), garlic, thyme and oregano.
- Pour over the chicken and vegetables.
- Cover and bake for 45 minutes to 1 hour or until chicken is tender and sauce is thickened.
- Serve with rice.
