Amaretto baked plums

Amaretto baked plums

A tasty dessert recipe, ideal for dinner parties and perfect for an alternative Christmas pud!

  • Preparation: 45 mins

  • Serves: 4

What you need:

  • 8 plums
  • 70g/2.37oz marzipan
  • 10g/0.34oz butter
  • 2 dessert spoons soft brown sugar
  • 60g/2.02oz amaretto biscuits
  • 300g/10.14oz Alpro soya plain yogurt alternative
  • Splash of Amaretto optional

What you do:

  1. Preheat the oven to 200ºC/392ºF/Gas Mark 6
  2. Cut the plums in half, remove the stones and discard and place into an ovenproof dish.
  3. Roll a marble sized piece of marzipan and push into the whole left by the stones.
  4. Crush the amaretto biscuit using the end of a rolling pin.
  5. Mix half the amaretto biscuits into the yogurt
  6. Spoon the yogurt mixture over onto the plums.
  7. Dot with the butter, sprinkle the brown sugar and splash with amaretto if desired.
  8. Bake for 30 minutes until the plums are soft and juicy and slightly browned on top.
