Grilled pineapple with star anise & chilli
Chilli and pineapple? Trust us it works. This recipe's by Rowley Leigh, proprietor of Café Anglais, on behalf of Schwartz Flavour Forecast
Serves: 4
What you need:
- 175g (6 oz) light brown caster sugar
- 15g (1 pack) Schwartz Star Anise Whole
- 1 Schwartz Cinnamon Stick
- 1 tsp Schwartz Chillies Crushed
- 275ml (9fl oz) water
- 1 pineapple, whole
What you do:
- Combine the sugar and spices and water in a saucepan. Bring to a simmer, cook for five minutes, then leave to cool.
- Meanwhile peel the pineapple, quarter it and then cut away the core. Slice each segment lengthways into five long thin strips cut towards the centre.
- Heat a ridged griddle plate. Brush the pineapple slices with oil and then place on the grill, mark criss-cross lines on both sides of the pineapple.
- Place the slices, overlapping, on a large tray and pour over the Star Anise syrup. Serve hot or cold with a scoop of vanilla or coconut ice cream.
