Mango whip pancake

Pancakes don't just have to be for kids. Try an alcoholic version for adults only!

What you need:

Pancake mix:

• 100g plain flour
• Pinch of salt
• 1 egg
• 275ml milk
• 25g butter

Mango whip filling:

• 500ml single cream
• 35g icing sugar
• 50ml Finlandia Mango Fusion

What you do:

1. Sift 100g of plain flour with a pinch of salt into a bowl and break in an egg with a wooden spoon.
2. Gently add 275ml of milk, a little at a time, and continue beating the egg until a smooth batter forms.
3. Heat 25g of butter in a 7-inch frying pan. Once the pan is hot, put in two tablespoons of the batter and tilt the pan to coat the base evenly.
4. Cook until the pancake moves freely, then toss or turn until pancake is golden on both sides.

To make 500ml of pancake filler:

1. Put 500ml single cream in a large mixing bowl with 35g icing sugar and 50ml of Finlandia Mango Fusion.
2. Mix the ingredients thoroughly with an electric whisk (preferably multi-speed).
3. The vodka will mix perfectly and begin to fluff up.
