In the spirit pancakes

Naughty and definitely not for kids, treat yourself to some seriously adult pancake flavours!

What you need:

Pancake mix:

• 100g plain flour
• Pinch of salt
• 1 egg
• 275ml milk
• 25g butter

For the filling:

• Mixed fruit pieces
• Finlandia classic vodka or a Finlandia vodka fusion

What you do:

1. Sift 100g of plain flour with a pinch of salt into a bowl and break in an egg with a wooden spoon.
2. Gently add 275ml of milk, a little at a time, and continue beating the egg until a smooth batter forms.
3. Heat 25g of butter in a 7-inch frying pan. Once the pan is hot, put in two tablespoons of the batter and tilt the pan to coat the base evenly.
4. Cook until the pancake moves freely, then toss or turn until pancake is golden on both sides.

Pancake filling:

1. Simply soak a selection of mixed fruit pieces in Finlandia classic, or one of its fusions, and use these pieces as fillings for pancakes.
