Bittersweet pancakes

Everyone enjoys pancakes with a twist of lemon. This recipe goes one step further by adding a taste of lime in the form of flavoured vodka. The zest of the lemon and the zing of the lime is guaranteed to revitalise the taste buds and get the mouth watering

What you need:

• 100g of plain flour
• Pinch of salt
• 1 egg
• 275ml of milk
• 25g of butter
• 1 lemon
• Tbspn of sugar and
• 50ml Finlandia Lime Fusion
• Lemon zest

What you do:

Pancake recipe:

1. Sift 100g of plain flour with a pinch of salt into a bowl and break in an egg with a wooden spoon
2. Gently add 275ml of milk, a little at a time, and continue beating the egg until a smooth batter forms
3. Heat 25g of butter in a 7-inch frying pan
4. Once the pan is hot, put in two tablespoons of batter and tilt the pan to coat the base evenly
5. Cook until the pancake moves freely, then toss or turn until pancake is golden on both sides

Bittersweet pancakes:

1. Line the cooked pancakes with a twist of lemon
2. Add a tablespoon of sugar and 50ml Finlandia Lime Fusion. The tangy lime will compliment the traditional lemon flavour
3. Sprinkle with lemon zest for decoration
