Creamy chocolate soufflé

Creamy chocolate soufflé

Don't be scared of making soufflés, this chocolate one's really easy to make and takes under half-an-hour

Serves: 4
Takes: 20 minutes + 8 minutes for baking

What you need:

  • 100g Dark Chocolate
  • 60g unsalted butter
  • 3 tablespoons of cocoa powder
  • 2 egg yolks
  • 4 egg whites
  • 50g icing sugar

What you do:

  1. Melt the dark chocolate in a bain marie and mix in the butter. Sieve the cocoa powder and add to the mixture. Beat the egg yolks and mix in.
  2. Beat the 4 egg whites and add the icing sugar a little at a time. Carefully fold 1/3 of the egg white mixture into the chocolate mixture until the egg white is absorbed. Then fold in the remaining egg white.
  3. Grease the dishes with butter. Sprinkle icing sugar on the bottom and sides of the dishes.
  4. Divide the mixture between the dishes, sprinkle with sieved icing sugar and bake for 8 minutes in the pre-heated oven (200 degrees Celsius). Finish with a scoop of vanilla ice cream or orange sorbet and serve immediately.
