Creamy chocolate soufflé
Don't be scared of making soufflés, this chocolate one's really easy to make and takes under half-an-hour
Serves: 4
Takes: 20 minutes + 8 minutes for baking
What you need:
- 100g Dark Chocolate
- 60g unsalted butter
- 3 tablespoons of cocoa powder
- 2 egg yolks
- 4 egg whites
- 50g icing sugar
What you do:
- Melt the dark chocolate in a bain marie and mix in the butter. Sieve the cocoa powder and add to the mixture. Beat the egg yolks and mix in.
- Beat the 4 egg whites and add the icing sugar a little at a time. Carefully fold 1/3 of the egg white mixture into the chocolate mixture until the egg white is absorbed. Then fold in the remaining egg white.
- Grease the dishes with butter. Sprinkle icing sugar on the bottom and sides of the dishes.
- Divide the mixture between the dishes, sprinkle with sieved icing sugar and bake for 8 minutes in the pre-heated oven (200 degrees Celsius). Finish with a scoop of vanilla ice cream or orange sorbet and serve immediately.
