Moo-rish bites
Imagine a creamy cheesecake dessert made out of Jaffa cakes and biscuits... Well, now you don't have to!
Prep time: 30 mins
Makes: 4 individual cheesecakes
What you need:
- 50g (2oz) Anchor Butter
- 50g (2oz) Chocolate Orange Jaffa cakes, roughly chopped
- 100g (4oz) Chocolate Digestive biscuits, crushed
- 280ml double cream
- 200g (8oz) cream cheese
- 30ml (2tbsp) caster sugar
- 60ml (4tbsp) orange juice (‘with bits')
- 45ml (3tbsp) orange liquor
- Chocolate orange segments or orange flavoured chocolate
- Drinking chocolate/cocoa for dusting
- Orange rind for decoration
What you do:
- Line four individual ramekin dishes with cling film, place on a baking sheet
- Take chopped cakes and crushed biscuits, and mix together in a bowl
- Melt butter and add to biscuits, thoroughly combine together
- Take double cream and whisk until starting to thicken, add cream cheese and sugar, and mix together
- Add orange juice and orange liquor gradually and mix all together
- Spoon into ramekin dishes and place in the fridge to set for at least 2 hours
- When thoroughly cooled and set, carefully remove the cheesecakes from the dishes and peel off the cling film
- Place on serving plate, sprinkle with drinking chocolate / cocoa and decorate with chocolate wedge & orange rind
