Energy wraps

Energy wraps

These energy wraps make a great lunch - they're packed with slow-releasing carbohydrates and energy-releasing B vitamins to keep you going longer

Serves: 1
Each wrap contains: 530 calories, 28.6g protein, 78.3g carbohydrate, 11.6g fat, 13.7g fibre, 1.5 portions fruit/veg

What you need:

  • 1 Wheat and White Mission Deli Wrap
  • 75g drained tinned Puy lentils with 1/2 tsp concentrated vegetable stock added
  • 40g frozen soya beans
  • 1/4 an apple (Pink Lady or Cox), finely diced
  • 1tsp extra virgin olive oil
  • 15 fresh mint leaves, washed and finely chopped
  • Zest of 1/4 lemon
  • 1/2 - 1tsp lemon juice
  • Black pepper to season

What you do:

  1. Put the cooked Puy lentils in a bowl
  2. Meanwhie cook the frozen soya beans in water for 3 minutes and drain. Add to the bowl.
  3. Peel and very finely dice the apple. Add to bowl.
  4. Add the remaining ingredients and stir until mixed.
  5. Place the mix in your wrap. Fold up and enjoy!

Handy hint:

Works well with a couple of tablespoons of pomegranate seeds instead of apple.
