Summer salad

This summer salad is made with Hearts of Palm, an exotic vegetable harvested from the soft core of a palm tree.

• Serves: 4

What you need:

• 1 can Green Giant Hearts of Palm
• 1 large or 2 medium ripe avocado pears
• Juice of half and rind of 1 whole lemon
• 2-3 handfuls of baby spinach
• 1 pack Prosciutto ham
• French dressing or Balsamic dressing

What you do:

1. Halve the avocados, remove the stone and then peel and slice. Toss in a little lemon juice to prevent discolouration.
2. Slice the drained and rinsed Hearts of Palm, and combine with the spinach leaves and avocado. Tear the ham into small strips and toss with the salad, place in a suitable serving bowl and scatter with lemon zest.
3. Drizzle with French dressing to serve.
