Crunchy Cheddar & apple salad

On the table in 13 minutes, this salad is a lovely alternative to a few salad leaves with apples adding sweetness to tangy lemon and Cheddar

What you need:

  • 2 thick slices wholemeal bread, cubed
  • 2 tbsp vegetable oil
  • 1 small red apple, quartered and cored
  • juice half a lemon
  • 50g/2oz mature Cheddar cheese, grated
  • 1 carrot, peeled and grated
  • 1 (200g) bag crispy leaf salad

What you do:

  1. Toss the bread cubes in 1 tbsp of the oil then toast under a medium grill for 3mins, tossing occasionally until golden and crisp. Set aside.
  2. Thinly slice the apple and place in a bowl with the lemon juice and remaining oil, toss to mix. Add the cheese, carrot, croutons and salad leaves. Toss well to mix before serving.
