Red pepper salsa wraps

It's not always straightforward to conjure up interesting speedy ideas for veggies, but this one will certainly go down a treat

What you need:

• 1 pack JUS-ROL® Shortcrust Pastry Sheets
• 2 medium sized red peppers - each cut into 4
• 200g full fat soft cheese
• 1 small red chilli- deseeded and finely chopped
• 100g salsa
• To serve: guacamole or more salsa

What you do:

1. Preheat oven to 200ºC
2. Combine cheese with chilli and 75g salsa
3. Fill cavities in cut pepper quarters
4. Cut each pastry sheet into quarters, place a teaspoonful of the remaining salsa in centre of each quarter and then place the pepper quarter down centre of the pastry piece.
5. Brush borders with egg and bring the outer edges up across the pepper to meet in middle, press together and brush top pastry with beaten egg. Repeat with remaining peppers and pastry.
6. Bake for 15 - 20 minutes until pastry golden
7. Serve with more salsa or guacamole and green salad garnish.
