Super seeded turkey salad with tamari dressing

If you didn't know what a tamari sauce is, it's similar to soy sauce, so if you like soy dishes, you'll love this turkey salad

Serves: 2

What you need:

  • 1 x pack Bernard Matthews Farms Seeded Turkey Steaks

Tamari seeds for dressing:

  • 60ml/4tbsp sunflower seeds
  • 60ml/4tbsp pumpkin seeds
  • 30ml/2tbsp sesame seeds
  • 15ml/1tbsp medium soy sauce
  • 5ml/1tsp white sugar
  • 3ml/½ tsp dried parsley
  • 2 small peppers, red and yellow, sliced
  • 34ml/3tbsp olive oil
  • 2 small courgettes, sliced lengthways
  • 10ml/2tsp hoisin sauce
  • 5ml/1tsp rice vinegar
  • 1 small bag mixed salad leaves, washed

What you do:

  1. Preheat oven to 200°c/ 400°f gas mark 6*.
  2. Place the sunflower, pumpkin and sesame seeds in a bowl, and combine with the soy sauce, sugar and parsley.
  3. Spread the seeds on a baking sheet and toast in preheated oven for 8-10 mins turning occasionally.
  4. Cook the Bernard Matthews Farms Seeded Turkey Steaks in preheated oven for 30-35 minutes.
  5. Heat the olive oil in a pan, add the peppers and courgettes then soften for 3-4 mins and add the hoi sin sauce and vinegar.
  6. Place the salad leaves in a large bowl, toss with pepper and courgette dressing. Top with strips of Bernard Matthews Seeded Turkey Steak, scatter with toasted tamari seeds and serve.

* Fan assisted ovens 180c 20-25 mins
