Bubbly jubbly
Our take on Bubble and Squeak is quick to make and incorporates so many elements of Christmas dinner you'll get through the leftovers in no time. Eat hot or cold.
What you need:
- 750g mixed veg e.g. roast potatoes, parsnips, carrots, cabbage and sprouts
- 150g cooked gammon or turkey
- 4 dollops* of Hellmann's Real Mayonnaise
- 1 egg
- 1 tbsp oil
* 1 dollop is a level tablespoon of mayonnaise (15ml)
What you do:
- Mash together the cold roast potatoes, parsnips, cooked carrots, cabbage and sprouts with a little chopped gammon or turkey.
- Mix the Hellmann's Real Mayonnaise and egg together and bind together with the veg mix. Heat the oil in a non-stick pan, fill with mixture and level off with a spoon.
- Fry over a moderate heat for 5 mins and then place under a moderate grill until golden brown. Turn out onto a serving dish.
- Great served with side salad.
