Chicken, bacon, mushroom & spinach pastry cases
Fantastically easy, delicious mid-week meal

What you need:
- 6 JUS-ROL® Large Pastry Cases
- 2 rashers streaky bacon – diced or snipped with scissors
- 1 tbsp oil
- 1 small onion - diced
- 200g (approx.) of cooked chicken – skin and bone removed and meat roughly chopped
- 3-4 mushrooms – wiped and quartered
- 4tbsp. pasta style tomato sauce, OR whatever you have in the store cupboard or fridge
- 50g (good handful) of fresh spinach leaves
- Beaten egg or milk to glaze
What you do:
- Preheat oven to 220ºC, 200 ºC for fan assisted ovens, gas mark 7. Place the puff pastry cases, still frozen, onto a lined baking sheet, brush the rims with either beaten egg or milk and bake for 20 minutes.
- Meanwhile, gently sauté the bacon and onion in the oil, add the chicken and mushrooms and cook for 4-5 minutes.
- Then stir in the sauce of your choice and heat through thoroughly. Finally stir in the spinach if using and then divide between the cooked cases.
- Serve hot with vegetables or a salad.
