Soba noodle salad
This really simple salad packs a flavour punch and is a great addition to BBQs and summer buffets

What you need:
- 1 tbsp sesame seeds
- 250g Blue Dragon soba noodles
- 100g frozen soy beans or broad beans, cooked and shelled
- 2 tsp Blue Dragon rice vinegar
- 2 tsp Blue Dragon dark soy sauce
- 2 tsp runny honey
- 2 tsp Blue Dragon sesame oil
- 100g chicken breast, cooked and shredded
- 5 spring onions, finely chopped
What you do:
- Toast the sesame seeds in a dry pan until golden brown. Set aside.
- In a large pan of boiling salted water, cook the soba noodles until al dente (usually takes around 6 minutes or see pack instructions). Drain and refresh by plunging into iced water.
- Meanwhile in a smaller pan of boiling salted water, add the frozen soy beans or broad beans and blanch for 5-6 minutes. When cooked, plunge into iced water and then shell them. Set aside and discard the shells.
- In a large serving bowl mix the Blue Dragon rice vinegar, Blue Dragon dark soy sauce, honey and Blue Dragon sesame oil. Then add the flaked chicken, chopped spring onions, shelled soy (or broad) beans and the Blue Dragon soba noodles and toss together, throwing in the sesame seeds as well.
- Leave to infuse for half an hour or so in the refrigerator and then serve.
Cook's tip:
Remove the chicken for a vegetarian version of this yummy salad, or add cooked and shelled prawns for something a bit different!
