Chinese BBQ wings with blue cheese dip
You might not think that blue cheese and BBQ wings go together, but you'd be wrong!
What you need:
For the wings:
- 1Kg Chicken wings
- 1 jar Blue Dragon Chinese BBQ Sticky Sauce
- 1tbsp sesame seeds (toasted until golden in a dry frying pan)
- 1 bunch spring onions, sliced diagonally (reserve the green part for the dip)
- 1 bag of mixed salad (we like spinach, rocket and watercress)
For the dip:
- 6 tbsp mayonnaise
- 2 tbsp soured cream
- 1/2 lemon, juiced
- 3tbsp spring onion tops, sliced very thinly
- 50g Stilton (or other blue cheese), crumbled salt and pepper , to taste.
What you do:
- Marinate the wings with a whole jar of Blue Dragon BBQ Sticky Sauce in a resealable plastic bag, and leave to marinate in the refrigerator for at least one hour.
- Meanwhile, prepare the dip. Mix the mayonnaise, sour cream, lemon juice, Stilton and spring onion tops together. Season to taste. Place the dip in a small bowl and refrigerate until needed.
- When the wings are ready, remove from the bag and place on a baking tray, in a pre-heated oven at 200° C/ 400° F/ Gas 6 for 35-40 minutes, basting with any extra sauce until tender.
- When cooked through, arrange on a platter over a bed of mixed leaves. Garnish with toasted sesame seeds and spring onion pieces and with the blue cheese dip.
Cook's tip:
Use a milder blue cheese such as St Agur for a more mellow flavoured dip.
