Tuna & potato layer

    This really couldn't be easier to make and is a brilliant mid-week meal for all the family

    • Preparation: 10 mins
    • Cooking: 15 mins
    • Serves: 4

    What you need:

    • 500g New Potatoes Thinly sliced
    • 2 x 200g Tinned Tuna in Brine
    • 195g Tinned Sweetcorn (drained and rinsed)
    • 1 x Packet of Savoury White Sauce Mix
    • 300ml Semi-Skimmed or Skimmed
    • 1 tbsp Freshly Chopped Parsley
    • 50g Grated Cheddar Cheese

    What you do:

    1. Add the sliced new potatoes to a pan of boiling water. Cover and simmer for 10 minutes or until the potatoes are tender. Drain and allow to cool slightly.
    2. Make the white sauce from the pack and add milk, according to the instructions on the pack.
    3. In a saucepan add the tinned tuna, sweetcorn and parsley. Cook over a medium heat for 3-4 minutes or until piping hot.
    4. Place half the potatoes on the base of a heatproof serving dish. Pour over the tuna mixture. Add slices of potato on top and sprinkle with cheese
    5. Place under a pre-heated grill for 2-3 minutes or until golden brown.
