White chocolate & apricot slice
Rich and tasty, these no-bake slices are deceptively easy and guaranteed to be popular

What you need:
- Unsalted butter 110g (4oz)
- White Chocolate chips 200g (7oz)
- Ginger biscuits 200g (7oz), crushed
- Ready-to-eat dried apricots 200g (7oz), chopped
- Mini marshmallows 75g (3oz)
- Chocolate vermicelli 2tbsp
What you do:
- Grease and line a 20cm (8in) square cake tin.
- Put the butter and chocolate chips in a saucepan and heat very gently, stirring, until melted together.
- Remove from the heat and stir in the biscuits, apricots and marshmallows. Press into the tin, sprinkle with the chocolate vermicelli and chill for 2 hours or until set.
- Slice into 15 bars and remove from the tin to serve. Store, covered, in the fridge, for up to a week.
