Oat & raisin cookies

Try these delicious cookies to share with coffee or to give the kids a healthy treat after school.

What you need:

  • 125g plain wholemeal flour
  • 100g medium oatmeal
  • 75g sunflower spread
  • 1/2 tsp baking powder
  • pinch salt
  • 1 tsp ground cinnamon
  • 50 g soft light brown sugar
  • 2 tbsp golden syrup, just warmed
  • 50g raisins
  • 6 tbsp Oatly Organic Alternative to Cream

What you do:

  1. Pre-heat the oven to 190°C/170°C fan/gas 5
  2. Put the wholemeal flour and oatmeal into a bowl, add the baking powder, salt, cinnamon and sugar then rub in the sunflower spread. Add the golden syrup and raisins then mix to a firm dough with the Oatly Cream.
  3. Drop dessertspoonfuls of the mixture onto two greased baking sheets, leaving space between for them to spread. Bake in the oven for 12 minutes until just golden.

Cook's tip:

Tip: You could also add 50g finely chopped dried apricots to the mixture instead of the raisins
