Spiced cauliflower with peppers

Make these tasty Indian spiced cauliflower dish in under 20 minutes!

Indian name: Gobi Benarasi

What you need:

  • 2 tbsp vegetable oil
  • 2 tsp cumin seeds
  • 2 tsp fresh root ginger, chopped
  • 2 tsp garlic, chopped
  • ½ tsp green chilli, chopped
  • 300g red onions, chopped
  • 3½ tbsp Patak's Balti Curry Paste
  • 200g chopped tomatoes
  • 100g red pepper, diced
  • 100g green pepper, diced
  • 75g cherry tomatoes, halved
  • 750g cauliflower, cut into florets, blanched in boiling water and drained
  • juice of ½ lemon
  • fresh chopped coriander, to taste
  • salt, to taste

What you do:

  1. Heat the oil in a pan and add the cumin seeds. When the seeds begin to crackle add the ginger, garlic and green chilli. Allow to cook for about a minute before adding the red onion, they should start to colour after 5 minutes. Stir in the Patak's Balti Curry Paste and continue to cook for 3 minutes. Add the chopped tomatoes and allow to cook for about 5 minutes.
  2. Add the green and red peppers and continue to cook for a further 3 minutes, adding a little water if the mixture begins to stick. Add the cherry tomatoes and cauliflower and allow them to heat through. Add the lemon juice and salt to taste.
  3. Serve garnished with the fresh chopped coriander.
