Spiced cauliflower with peppers
Make these tasty Indian spiced cauliflower dish in under 20 minutes!
Indian name: Gobi Benarasi
What you need:
- 2 tbsp vegetable oil
- 2 tsp cumin seeds
- 2 tsp fresh root ginger, chopped
- 2 tsp garlic, chopped
- ½ tsp green chilli, chopped
- 300g red onions, chopped
- 3½ tbsp Patak's Balti Curry Paste
- 200g chopped tomatoes
- 100g red pepper, diced
- 100g green pepper, diced
- 75g cherry tomatoes, halved
- 750g cauliflower, cut into florets, blanched in boiling water and drained
- juice of ½ lemon
- fresh chopped coriander, to taste
- salt, to taste
What you do:
- Heat the oil in a pan and add the cumin seeds. When the seeds begin to crackle add the ginger, garlic and green chilli. Allow to cook for about a minute before adding the red onion, they should start to colour after 5 minutes. Stir in the Patak's Balti Curry Paste and continue to cook for 3 minutes. Add the chopped tomatoes and allow to cook for about 5 minutes.
- Add the green and red peppers and continue to cook for a further 3 minutes, adding a little water if the mixture begins to stick. Add the cherry tomatoes and cauliflower and allow them to heat through. Add the lemon juice and salt to taste.
- Serve garnished with the fresh chopped coriander.
