Baked gnocchi with broccoli

Baked gnocchi with broccoli

A great vegetarian dish which also makes a tasty side dish for chops and chicken fillets, for example.

  • Preparation: 5 mins
  • Cooking: 5 mins
  • Serves: 4

What you need:

  • 2 tbsp cornflour
  • 250 ml carton Oatly Organic Alternative to Cream
  • 200ml chilled Oatly Enriched or Organic oat drink
  • 1 tsp powdered vegetable stock
  • 100g stilton cheese, crumbled
  • 450g frozen broccoli florets, thawed
  • 500g gnocchi

What you do:

  1. In a saucepan, blend the cornflour to a paste with a little of the Oatly drink then add the rest, the Oatly Cream and the vegetable stock powder. Bring to simmer and stir until thickened. Add the cheese and stir until it has just about melted, season if needed. Preheat the grill to high.
  2. Cut the florets in half or more if large. Bring a large pan of lightly salted water to the boil, add the broccoli and gnocchi and boil for 2 minutes or until the gnocchi come to the surface of the water
  3. Drain in a colander, return to the pan and add the cheese sauce. Spoon into four ovenproof dishes and place under the grill for 2-3 minutes until bubbling.

Cook's tip:

Tip: you can use other varieties of cheese, eg reduced fat cheddar or a smoked cheese.
