Soy & honey pork with sweet & sour sauce
Devised by Sophie Michell, star of Cook Yourself Thin, this sweet and sour soy and honey pork is a great mid-week meal, ready in just 25 minutes
Sophie says, 'Long grain and wild rice together is a great complex carbohydrate, plus Uncle Ben's Boil in Bag variety is ready in just 20 minutes.'

What you need:
- 2 tbsp light soy sauce
- 1 tsp sesame oil
- 1 tsp honey
- 1" piece of fresh ginger, finely grated
- 4 pork chops of pork loin steaks
- 1 jar of Uncle Ben">
- 6 spring onions
- 150g mange tout
- 250g of Uncle Ben's long grain and wild rice (or two of the boil in bag packets)
What you do:
- Firstly mix all of the marinade ingredients together, add the pork and leave for 20 minutes while you prepare the rest of the meal.
- Heat up a pan of water and cook the rice according to the packet instructions.
- Heat a frying pan up until very hot, then cook the pork for 5 minutes on each side or until cooked through out (this depends on thickness)
- Meanwhile roughly chop the spring onion and briefly stir fry with the mange tout. Add the Uncle Ben's ® sweet and sour sauce and heat to a simmer.
- Spoon sauce over the pork and serve with rice.
