Easy sweet & sour turkey

This is a great dish with turkey escalope strips, or if you're looking for inspiration for your Christmas leftovers, this recipe's easy!

Preparation time: 10 minutes
Cooking time: 10 minutes
Serves: 4

What you need:

  • 2 x 200g packed mixed baby vegetables such as carrots, mangetout and baby corn
  • 1 tbsp vegetable oil
  • 350g/12oz turkey escalopes, cut into thin strips
  • 500g jar Uncle Ben's Sweet and Sour Sauce

What you do:

  1. Halve the carrots, baby corn and mangetout lengthways.
  2. Heat the oil in a wok or large frying pan and fry the turkey for about 3 minutes over a high heat until browned.
  3. Add the vegetables and stir fry for 4 minutes.
  4. Pour over the Uncle Ben's sweet and sour sauce and heat gently until piping hot.
  5. Serve with Uncle Ben's long grain rice.
