Enchiladas

Enchilada means 'filled with chilli' and that's what you'll find in this classic Tijuana recipe

Serves: 4
Preparation: 5 mins
Cooking: 55 mins

What you need:

  • 1 tbsp oil
  • 350g lean minced beef
  • 1 jar Discovery Wicked Chilli Sauce
  • 1 pack Discovery Flour Tortillas
  • 1 jar Discovery Enchilada Sauce
  • 50g Cheddar cheese, grated

What you do:

  1. Preheat oven to 200°C. Heat oil and fry mince with seasoning until browned.
  2. Add sauce and 200ml water, bring to the boil and simmer for 20-25 minutes until mince is tender and thick.
  3. Fill tortillas with chilli, roll up pancake-style and arrange in a large square ovenproof dish.
  4. Pour Wicked Chilli Sauce over tortillas, sprinkle with cheese and cook in a preheated oven for 20-25 minutes or until browned and bubbling. Serve immediately.
