Creamy chicken & butternut braise

This dish is easy to prepare and suitable for a family meal or special occasion. Butternut squash is a very good source of beta-carotene, which can be converted into vitamin A by the body. Vitamin A helps to keep the skin and immune system healthy.

What you need:

  • 1 tbsp olive oil
  • 6 chicken thigh fillets (they should be skinless and boneless) approx 500g
  • 1 small onion, finely chopped
  • 175g chestnut mushrooms, sliced
  • 400g butternut squash, peeled weight and cut into 2cm cubes
  • 200ml chicken stock
  • 1 tsp chopped rosemary
  • 250ml carton Oatly Organic Alternative to Cream

What you do:

  1. Heat the oil in a non-stick flameproof casserole or deep frying pan with lid. Add the chicken pieces and cook over a medium heat until lightly golden about 5 minutes. Remove from the pan onto a plate.
  2. Cook the onion in the pan for 2-3 minutes to soften. Increase the heat and add the mushrooms, stir fry for 5 minutes, stir the butternut squash the mixture. Add the stock and rosemary and bring to the boil.
  3. Stir in half the Oatly cream and simmer for 5 minutes then return the chicken to the pan. Cover and cook gently for 15 minutes.
  4. Remove the lid and continue to simmer about 10-15 minutes and reduce the liquid and concentrate the flavours. Finally stir in the remaining Oatly cream and season if needed with black pepper, serve piping hot with a green vegetable,

Cook's tip:

This dish will freeze well and can be made ahead for the festive season. Cook to the end of step 3. Allow to defrost in the refrigerator overnight. To re-heat, simmer for the final 10-15 minutes of cooking time as in step 4.

Tip: ready boned thighs are more expensive, if you have time, buy with bone in and using a sharp knife, remove the bones at home. Supermarkets often have thighs on offer, stock up in the freezer and use when needed. For a dinner party, use 4 skinless chicken breasts, cut each into three pieces and cook in the same way.
