Cajun fish & chips

Cajun fish & chips

Add a south American flavour to traditional fish and chips with this tasty dish that will go down a treat with all the family

Serves: 6

What you need:

  • 6 x 170g (6oz) coley fillets
  • 65g packet Cajun Chicken and Southern Fried Seasoning
  • 300ml (10fl oz) water
  • 4-5 large potatoes, washed and cut into wedges
  • 2 x 15ml spoon (2 tablespoons) vegetable oil

What you do:

  1. Preheat the oven to 220°C/425°C, Gas Mark 7
  2. Lay potatoes on a baking tray. Coat with oil and half the seasoning.
  3. Bake for 25 minutes.
  4. Place the fillets in a shallow ovenproof dish.
  5. Add water to the Cajun mix. Pour the Cajun liquid over the fish.
  6. Bake for 20 minutes.
  7. Serve fish and chips with peas and lemon wedges.
