Turkey & mushroom pasta bake

If you're having a children's party but still want them to eat something healthy that's not full of additives, then this recipe is perfect as it feeds 25!

Serves: 25 children

What you need:

  • 1.5kg Quality British Diced Turkey Mince
  • 4tbsp Oil
  • 450g smoked, rindless streaky bacon, diced
  • 4 small onions finely chopped
  • 900g mushrooms, sliced
  • 4 small red peppers, seeded and diced
  • 2 large pinches of dried mixed herbs
  • Salt and freshly ground pepper
  • 500g green tagliatelle/pasta shapes
  • 2.5ltr / 4pt white sauce
  • Large pinch of nutmeg
  • 450g grated cheddar cheese

What you do:

  1. Heat the oil and brown the bacon. Add onion and sauté until soft. Add turkey mince and cook whilst stirring, until coloured. Add mushrooms, pepper, and herbs and seasoning, cook at high heat for 2-3 minutes, then set aside.
  2. Cook the pasta, rinse in cold water and drain well.
  3. Mix white sauce with nutmeg.
  4. Arrange half of the pasta in a shallow ovenproof dish.
  5. Pour over one third of the white sauce. Cover with a final layer of pasta and remainder of sauce.
  6. Sprinkle with grated cheese and bake at 200ºC/400ºF/Gas Mark 6 for 25 minutes.
