Garlic turkey with salsa

Marinade the turkey breasts for 30 minutes so the meat can soak up the delicious sweet chilli, rosemary and garlic flavours

Preparation Time: 15 minutes plus marinade
Cooking Time: 15 minutes
Serves: 4

What you need:

  • 4 x British turkey steaks
  • 2 tbsp olive oil
  • 3 garlic cloves
  • 2 sprigs rosemary, finely chopped
  • 250g tomatoes, seeded and finely chopped
  • 4 spring onions, finely chopped
  • ¼ cucumber, finely diced
  • 1 tbsp sweet chilli sauce
  • juice of ½ lime
  • bunch coriander, finely chopped

What you do:

  1. Mix the olive oil, garlic and rosemary and brush all over the steaks. Leave to marinate for 30 minutes.
  2. Combine the tomatoes, spring onions, and cucumber. Add the sweet chilli sauce, lime juice and coriander and mix well.
  3. Preheat a griddle until smoking. Cook the turkey for 5 minutes each side, or until cooked through. Serve with a generous helping of the salsa and a green salad.
