Chicken fajitas

Chicken fajitas

Speedy to make, these traditional Mexican chicken fajitas can be made as spicy as you like, then cooled down with sour cream and guacamole

What you need:

  • 50g boneless chicken, cut into thin strips
  • 20g Discovery Wicked Chilli Spice Mix
  • 3 x 15ml tbsp Oil
  • 1 x large onion, sliced
  • 1 x green pepper, sliced
  • 1 x red or yellow pepper, sliced
  • 12 x Discovery Chilli and Jalapeno Tortillas
  • 100g Discovery Guacamole
  • 100g Discovery Ranch Salsa

What you do:

  1. Cut the chicken into thin strips (or coat and cook a whole breast, slicing afterwards) and sprinkle with Wicked Chilli Spice Seasoning.
  2. Heat oil. Add onion and peppers and fry over high heat for approx. 5 minutes.
  3. Remove from the pan with a slotted spoon.
  4. Heat remaining oil. Add chicken and stir fry for approx. 5 minutes or until the chicken is cooked and browned.
  5. Add the onions and peppers and quickly fry until heated through.
  6. Serve immediately with flour tortillas, salsa and guacamole.
