Beef & orange kebabs

A really tender sirloin steak cut into cubes married with sweet segments of orange - the perfect bbq kebab!

What you need:

  • 1 small sweet navel orange
  • 4 tbsp yogurt
  • 2 tbsp Patak's Madras Curry Paste
  • 450g boneless sirloin steak cut into 1" cubes
  • 1 green pepper cut into pieces
  • 1 medium onion diced into 1" cubes

What you do:

  1. Grate ½ tsp of rind from the orange. Cut unpeeled orange into wedges then cut wedges in half.
  2. Combine orange rind, yogurt and Patak's Madras Curry Paste into a large bowl.
  3. Add the beef cubes and allow to marinate in the refrigerator, covered for ½ hour.
  4. Thread the beef cubes onto skewers alternating with orange, green pepper and onion.
  5. Cook over low coals or under a moderate grill 4-5 inches from heat for 10-15 minutes, turning occasionally.
