Mitch Tonks' crispy scampi with whisky mayonnaise

Fishmonger, restaurateur and celebrity chef Mitch Tonks created this delicious scampi recipe, perfect for a Christmas Eve party!

Serves: 4 as a starter

What you need:

  • 1 bag Young's Premium Wholetail Scampi
  • 300ml of shop bought or home-made mayonnaise
  • 250ml vegetable oil
  • 4-5 tbsp tomato ketchup
  • Good shot of your favourite whisky
  • Pinch of cayenne pepper
  • Iceberg lettuce for serving

What you do:

  1. Fry or bake the scampi until crisp. Make the sauce by mixing together the tomato ketchup, mayonnaise, cayenne and whisky.  
  2. Serve the scampi on a bed of shredded iceberg lettuce with a good spoonful of the whisky mayonnaise.
