Seared Tandoori sea bass with mango & chilli salad

Fresh, seriously healthy and perfect for the barbecue. Try using cod as an alternative

What you need:

  • 1 tbsp Patak's Tandoori Curry Paste
  • 4 x 175g fillets of sea bass with skin left on, sliced in half lengthways

For the salsa salad

  • ½ - 2 red chillies (depending on your heat preference and freshness of chillies), deseeded and sliced
  • 4 spring onions, chopped
  • 1 ripe avocado, peeled, stoned and diced
  • 2 mangoes, stoned, peeled and diced
  • juice of 1 lime
  • rocket to garnish

What you do:

  1. Rub the Patak's Tandoori Curry Paste over the sea bass fillets.
  2. Griddle or barbecue the fish for 2 minutes each side.
  3. Meanwhile, mix all the salsa ingredients together.
  4. Serve the sea bass with the salsa salad and garnish with the rocket.
