Fruity granola with rhubarb

Fruity granola with rhubarb

Granola is a really healthy breakfast and you'll be getting in one of your five a day with the added fruit

Preparation time: 10 minutes
Cooking time: 10 minutes
Serves: 6

What you need:

  • 450g jumbo porridge oats
  • 50g flaked almonds
  • 75g mixed seeds
  • 1 tbsp honey
  • 200g dried fruit, e.g. sultanas, cranberries and chopped figs
  • 400g rhubarb, cut into 3cm pieces
  • 2 tbsp caster sugar

What you do:

  1. Preheat the oven to 200°C, gas mark 6.
  2. Mix together the oats, almonds, seeds and honey and place on a large baking tray. Bake for 10 minutes. Allow to cool before mixing in the dried fruit.
  3. Meanwhile, place the rhubarb and sugar in a saucepan with 3 tbsp water and cook for 6 minutes until softened. Serve with the granola and milk or yogurt if required.

Handy tip:

Try using different dried fruits for variation, such as mango, pineapple, apricots or prunes.
