Chocolate cherry mousse

Chocolate cherry mousse

Chocolate and cherries is a match made in heaven. Perfect for entertaining or treating the family as this dessert can be made ahead and kept in the refrigerator until needed.

  • Preparation: 20 mins
  • Cooking: 10 mins
  • Serves: 6

What you need:

  • 350ml Oatly Chocolate drink
  • 100g plain dark chocolate, chopped into small pieces
  • 3 egg yolks
  • 357g jar morello cherries drained

What you do:

  1. Put the Chocolate Oatly into a medium size pan and bring just to the boil. Take the pan off the heat and add the chocolate, stir until almost melted the add the egg yolks. Blend with a stick blender for 30 seconds or an electric hand mixer until the mixture has thickened a little and is a little frothy
  2. Pour into a jug and cool. Pour into six small glasses or ramekins.
  3. Drain the cherries and dry on kitchen paper. Gently drop the cherries into the chocolate mousses then refrigerate to set.

Cook's tip:

Tip: place the glasses or dishes on a small tray then it will be easier to place them in the refrigerator.

If you can't find morello cherries in a jar, use canned black cherries, drain well.

These will keep for two days in the fridge.
