Mexican turkey waves
These Mexican turkey tortillas are brilliant for packed lunches, or a delicious and speedy lunch at home

What you need:
- 1 x pack Bernard Matthews Farms Turkey Steaks
- 1 x pack soft flour tortillas
- 1 x bag mixed salad, washed
- 4 medium tomatoes, quartered
- 60ml/4 tbsp sour cream or plain yogurt
- Guacamole filling
- 1 x large ripe avocado
- 30ml/2tbsp olive oil
- 1 clove garlic, peeled and crushed
- 1 lime, juice
- 1 small bunch fresh coriander, chopped
- 1 pinch ground cumin spice
- 3ml/½ mild red chilli, seeded and chopped
- Salt and freshly ground black pepper to season
What you do:
- To make the guacamole filling, cut the avocado in half and remove the stone.
- Scoop the flesh into a bowl and mash with a fork.
- Add the olive oil, garlic, juice of one lime, chopped coriander cumin and chilli. Season to taste with salt and pepper.
- Oven or grill the Bernard Matthews Farms Turkey Steaks following pack directions.
- Heat the tortillas in the microwave.
- Slice the Bernard Matthews Farms Turkey Steaks into fingers and bring to the table with the tortillas, tomatoes, sour cream, salad and guacamole.
