Easy does it omelette
Whether it's for breakfast or a light lunch this omelette will use up your leftover smoked salmon and as an alternative to scrambled eggs is impressive enough to serve to guests. Delicious and so easy to make - you can't go wrong!
What you need:
- 30g Smoked salmon slices (cut into strips)
- 1 dollops* of Hellmann's Light Mayonnaise
- Chopped chives
- 2 eggs
- Pepper
- Wedge of lemon
- *1 dollop is a level tablespoon of
- mayonnaise (15ml)
What you do:
- Mix together the smoked salmon strips, a generous dollop of Hellmann's Light Mayonnaise and a sprinkling of chopped chives. Season well with pepper.
- In a separate bowl, lightly whisk 2 eggs together and add a little pepper.
- Heat a splash of olive oil in a small frying pan and add the eggs. When the omelette is nearly set, spread the salmon mix over and fold in half.
- Allow to cook for another couple of minutes so the filling warms up, then eat immediately.
- Great served for brunch with a wedge of lemon for brunch.
