Chocolate orange pannacotta

Chocolate orange pannacotta

A light chocolate pudding which doesn't cost the earth but tastes like heaven!

  • Preparation: 15+ mins

  • Serves: 6

What you need:

  • 1 sachet powdered gelatine
  • 2 x 250ml cartons Oatly Organic Alternative to Cream
  • 125 ml Oatly Enriched or Oatly Organic oat drink
  • 1 tsp vanilla extract
  • 100g caster sugar
  • 2 tbsp Cointreau or Grand Marnier
  • 50g plain chocolate
  • 2 oranges
  • 3 tbsp golden syrup

What you do:

  1. Lightly oil 6 individual pudding basins/ moulds.
  2. Put the gelatine powder into a small bowl, cover with 3 tbsp cold water and leave to soak 5 minutes. Either stand in a small pan with simmering water and allow to dissolve or microwave for 30 seconds and then stir until dissolved
  3. Put the Oatly cream, oat drink, vanilla extract, and sugar into a pan and heat to a simmer, stir until the sugar has dissolved. Take off the heat, add the Cointreau or Grand Marnier then the liquid gelatine to the cream mixture and stir, then add the chocolate, stir again until melted and smooth. Pour into a jug through a sieve then pour into the moulds. Cool and chill 4-6 hours until set.
  4. To make the orange syrup, using a vegetable peeler, peel strips of rind from the oranges. Stack two or three and with a sharp knife, cut thin shreds, put into a pan with the golden syrup and the juice from the oranges. Simmer 2-3 minutes until the liquid is syrupy. Allow to cool.
  5. To serve the pannacotta, dip the basins for 3-4 seconds in a bowl of hot water. Invert on a plate and give the basins a gentle shake. Serve with a little of the syrup poured over.
