Poached egg, ham & mustard on toast

Improve your mood, boost your concentration levels and have a delicious breakfast all at once with this poached egg and ham recipe

What you need:

  • 2 medium eggs
  • 2 slices wholemeal bread (120g)
  • 2 tsp wholegrain mustard
  • 2 thick cut slices British ham (80g)

What you do:

  1. Add the eggs to a pan of boiling water and poach for 2-3 minutes or slightly longer for a firmer result. Meanwhile, toast the bread, spread with the mustard and add the ham.
  2. Place the poached egg on top and season with black pepper.

Handy hint:

Try replacing the mustard with pickle or fruit chutney, or spoon over some hollandaise sauce for a special occasion.
